Ingredients
- 50ml gin
- 20ml elderflower liqueur
- 20ml fresh lemon juice
- 10ml simple syrup (adjust to taste)
- 1 egg white or aquafaba
- Ice
To garnish:
- Elderflower sprig

Method
Dry shake:
Add the gin, elderflower liqueur, lemon juice, simple syrup and egg white (If you’re concerned about using raw egg, aquafaba works just as well) to a shaker with no ice. Shake hard for around 15 seconds to build that soft, silky texture.
Shake again:
Add ice and shake again until well chilled.

Strain:
Double strain into a chilled coupe glass for a smooth, velvety finish.
Garnish:
Gently place a small sprig of edible elderflower (make sure it’s labelled edible, as some elderflower sprigs have been treated and are not edible).
